Chef Casey Wall and front-of-house manager Manu Potoi (who co-own Fitzroy's Rockwell & Sons) will team up with sommelier Banjo Harris Plane and manager Michael Bascetta (both formerly at Ripponlea's Attica) to open Bar Liberty, also in Fitzroy.

According to Potoi, the new wine bar and eatery will be about "creating an accessible place to eat and drink, pared back to what we call the non-negotiables".

These non-negotiables include a detailed drinks list – boutique wines, spirits and quirky craft beers – and a menu that Wall is designing based on local ingredients and big flavours.

Bar Liberty is planning to open by mid-February at 234 Johnston Street, Fitzroy.
