San Telmo owners to take over Abbotsford's Aviary Hotel

The owners of the Latin American-leaning San Telmo, Pastuso and Asado restaurants are adding yet another string to their bow, taking over Abbotsford's Aviary Hotel.

"We'd been talking for ages about how a simplified version of the food we do in the restaurants would work really well in a pub," says co-owner Dave Parker. "A few grilled steaks, grilled vegies – keeping it pretty simple."

Dave and Mickey Parker, Jason and Renee McConnell and new partners Michael Jenkinson and Mihir Mason (the Aviary's current manager), will take over the Victoria Street pub in about a month.

They hope to gently tweak the interior without closing the pub. The biggest changes will be seen in the food and drinks offering, which will be overhauled when the new chef starts.

"We've always hung out at the Aviary anyway, so this makes sense for us," says Parker.
