Sandwich star Hector's Deli is heading to South Melbourne

The bayside sandwich scene is soon to be booming. Hot on the heels of North Melbourne's Bread Club opening in Albert Park, Hector's Deli, the Richmond venue whose all-chef staff means impeccable product, is planning its second venue in South Melbourne.

The team have taken over the lease of one-time Clarendon Street institution GAS Eatery and Supplies.

As with the Richmond original, Dom Wilton (co-owner along with Vanessa Bossio and Edward Ring) says the focus remains on improving classics rather than reinventing the wheel, with every item meticulously produced to restaurant standard.

The core sandwich selection is winding south, including the tuna melt with house-pickled green chilli; HCT (hectic cheese toastie featuring a triple hit of dairy and tomato relish) and the crumbed chicken or mushroom sandwiches on a steamed potato bun.

In addition, there will be a new range of fresh sandwiches built to withstand travel, that were developed during lockdown, such as roast beef served on specially-made Turkish bread. There will also be a range of salads including a play on panzanella with tomatoes, grains and house-made tomato vinegar. They will offer additions such as egg mix and avocado to make salads into a substantial lunch.

Hector's Deli also plans to develop its house-coffee range, including canned caffeine to-go. They will also be selling two beers, one on tap, including their own brew developed with Stomping Ground.

Hecker Guthrie will design the interior at the second location.

Doors are expected to open in July at 253 Clarendon Street, South Melbourne, hectorsdeli.com.au.
