South Yarra's Bar Carolina to expand with cafe and rooftop terrace

South Yarra's Bar Carolina is having a baby – two, in fact.

Owner Joe Mammone, the restaurateur behind Sarti and Il Bacaro, will open Cantina Carolina, a cafe with all-day dining from healthy-ish Italian breakfast through to dinner, in the former dental surgery next door.

He's simultaneously teaming up with a couple of friends, Joey Dee and James Sutherland, to open Tetto ("roof" in Italian), a small, smart rooftop terrace wine bar above the cafe where the waiters will don white jackets to serve cocktails and "serious" stuzzichini. The bar is aimed at a slightly older crowd, says Mammone, and the vibe will be piano bar, not nightclub.

Mammone has again enlisted Chris Connell to oversee the design of the new spaces, which will incorporate terrazzo floors, detailed steelwork and a custom-made rug for the bar

Working on the floor, Mammone says he has the luxury of being able to talk to his customers, who have helped steer the business direction – he's heeded their call for weekend breakfasts and a more grown-up space in which to meet friends for drinks.

He plans to open daily at Canina Carolina, and for lunch Thursday to Sunday and dinner Tuesday-Sunday. The chefs are yet to be confirmed.

Bar Carolina is at 44 Toorak Road and Cantina Carolina and Tetto will be at 48 Toorak Road.
