Star Singapore chef to host dinner in Sydney

The Singapore chef behind the go-to stop for visiting international food tourists and star of Netflix's Street Food Asia is headed to Sydney.

Wayne Liew, from Keng Eng Kee, is cooking collaborative dinners with Sydney chef Brent Savage at Savage's Barangaroo restaurant, Cirrus Dining.

The three-night stand will run March 3 to 5. "We're going to do his black pepper crab with Balmain bugs," Savage says.

The nine-course degustation will also include crisp fish skin with whipped mullet roe and cured egg yolk, coffee pork ribs, and a pandan custard dessert with coconut jam and lychee granita. (After Liew departs, Cirrus Dining will then continue the Singapore celebrations with a six-week pop-up, featuring a Singapore-inspired special menu designed by Brent Savage including a la carte and a tasting menu.)
