Steak on the menu at 6Head at Circular Quay

When the restaurants start rolling out in May after the $32 million upgrade of the historic Campbell's Stores building at Circular Quay, a new restaurant named 6Head will be among the new arrivals.

While news of a Japanese and a Chinese restaurant rumoured to be named Pearl is trickling out, 6Head takes it roots from the First Fleet.

"Six head of cattle were landed; the convict who was looking after them fell asleep and they took off," says 6Head executive chef Sean Hall.

"They were found years later (out near Camden) and there were about 100 of them."

The chef says the Seagrass Hospitality-backed restaurant will offer six signature cuts of steak, all dry-aged on the premises.
