The Bavarian's sudden exit from its Campbell Parade digs has paved the way for a much more Bondi Beach-sounding venue. Salty's, a laid-back surf bar and eatery, will open in the space in October.

The Millett family paid a tad over $18 million last year for the four-storey building overlooking Bondi. While their primary business is budget accommodation, the Milletts also operate Mill House bar and restaurant at Tomasetti House in Melbourne and The Surf House at Byron Bay.

Christian Millett told Good Food that Salty's will get its design inspiration from a number of places, including Tower 12 at Hermosa Beach, California.

"I'm getting old boards from the 1970s and 1980s, the sort of thing Cheyne Horan rode," he says of the venue's design accoutrements.

Millett says the relaxed menu will include fish tacos.
