Sydney chef Peter Conistis to open the Greek Customs House in Geelong

Hold on to your Greek fisherman's cap, Geelong. Peter Conistis, a pioneer of modern Greek cuisine in Sydney, is weeks away from opening a seafood-focused taverna in the heritage-listed Customs House on the Geelong waterfront.

The Greek Customs House will be Conistis's first foray into the Victorian market, an "off-Broadway" venture to test whether the formula that's proved a success at Alpha in Sydney works south of the border.

The restaurant, which will seat 80 inside and about 50 in the courtyard, will have a big display of seafood near the front of the dining room, in the style of a traditional beachside taverna. Select from the display and have it cooked over charcoal and olive wood on the big outdoor oven he's installing in the courtyard.

The menu will use as much local produce as possible. "Coming from Sydney, I'm amazed at how good it is and how close to Geelong it's grown – it's only a short car trip away."

The Greek Customs House, at 57 Brougham Street, Geelong, and will open on November 23.
