When Australia's first surf park opens in Tullamarine later this year, waves won't be the airport suburb's only draw. Darren Robertson, Mark LaBrooy and Andy Allen will open their fifth Three Blue Ducks restaurant – their first in Melbourne – at URBNSURF.

It took the promise of surf to lure the chefs – who have so far stuck to Sydney, Brisbane and Byron Bay – to Melbourne. "We've looked at doing something down here before, but didn't think we could offer Melbourne anything it wasn't already doing," Robertson says. "But when this came up, we thought, this is it."

As at the northern Three Blue Ducks, they'll be serving up pizza, rotisserie chook, steak, whole fish, salads, pickles and ferments, with the same local, sustainable ethos. There will be a focus on takeaway for those there to surf, and an indoor restaurant and bar for spectators or those there purely to dine. "You won't have to be a surfer to enjoy the space," Robertson says.

Three Blue Ducks at URBNSURF will open for summer 2019.
