It was only a matter of time. A new purveyor of Korean-style sweet toast with scrambled egg has hit town, with Toastiesmith opening at the Chatswood Interchange and another to follow at Darling Square.

A Toastiesmith spokeswoman says the budding chain takes its inspiration from the Korean giant of the genre, Isaac Toast, but adds a local twist.

"In Korea they sprinkle sugar, [whereas] here we just have a brioche," she says.

"There's a roast sesame slaw, and as well as doing the fluffy scrambled egg we do a fried chicken and crispy fish version."

"The all-day breakfast sandwich started as a street food thing in Korea – it has grown and grown," she says.

Toastiesmith owner Yan Chen picked up on the trend while travelling and spotted what he is banking on as a gap in the Australian takeaway market.

"The second one will open at The Exchange at Darling Square on September 16," the spokewoman says.
