Tonka and Coda owner-chef Adam D'Sylva to head up W Melbourne restaurant, Lollo

Adam D'Sylva, the chef behind Tonka and Coda, has been named as the creative director for Lollo, the flagship at the Marriott's W Melbourne hotel, opening in February.

Lollo will be a day-to-night operation and one of four food venues at the hotel along with a bar, Curious, Culprit Cafe and Warabi, a 30-seat fine-dining Japanese restaurant. The hotel's executive chef, Jihun Kim, will oversee all venues, but as creative director, D'Sylva is excited to bring an eclectic menu drawing on his love of Asian dishes as well as his Indian-Italian heritage, to the other end of the CBD.

That might mean spanner crab omelettes and breakfast pizzas with white beans and ham, and a dinner menu featuring duck lasagne, some curries, and baked burrata with a melty, molten centre.

Food has always been central to the W Hotel brand, with the Three Blue Ducks heading up Australia's only other W, in Brisbane. D'Sylva says he is happy to work with a brand that "is fun and quirky, and that matches my personality."
