Vegetarian cafe and Milton icon Pilgrims opens in Bronte

Is the "preview" the new Just Open? It has certainly worked at Pilgrims, which has swung open its doors in a limited fashion, next door to Iggy's on Macpherson Street in Bronte.

"We'd started [on the project] before all this happened and thought we've come this far, and sentiment has shifted a little," says Nick Bardetta, co-owner of the Bronte start-up. "We aren't calling it an opening, it's a limited preview menu."

Pilgrims is a 40-year-old icon at Milton, with its vegetarian focus already pulling customers for takeaway in Bronte.

"My wife's family, the Quigleys, and [another family] the Stewarts have holiday houses down the coast and have always loved Pilgrims," Bardetta says.

The group struck a deal last year with Pilgrims south coast owners to bring the brand to Bronte.

The Quigley, Bardetta and Stewart families jointly own and operate the Bronte venue as an extended family affair.

"My sister-in-law, Deb, is a designer and did the interior, and my wife Ashlea is also really involved," he says.

It certainly looks smart, and with the original Pilgrims currently shut they've had some of the team from the original up in Sydney fine-tuning for the, er, preview.
