Woollahra's Vincent restaurant and Wine Library have sold and rumours persist Pinbone site might follow, as the trio behind the venues dilutes its stake in the upmarket suburb to pursue other interests.

Restaurateurs James Hird, Todd Garratt and Traci Trinder have finalised the sale of Vincent to the owners of The Hughenden Hotel. Max Vloet, from Quay, will step in as Vincent's new head chef.

"Wine library is being bought by John Giuffre and Randeep Rai who have worked with us for the last few years. John has been here since we opened ... Randeep is the bookkeeper for all our ventures, so they know the place inside out," Hird said.

Hird refused to comment on speculation about the Pinbone site, where the trio operated Buzo restaurant.

"After 15 years together, it's time to move on, looking forward to starting new ventures," he adds.

Hird, who has plans for winemaking in South Australia, is also helping to organise the 2015 Rootstock Sydney Festival.
