There’s no doubting owner-chef Michael Flouch’s technical prowess in the kitchen. Sweet roasted pear crowns pillowy potato gnocchi tossed through a herby blue-cheese sauce; crackling snaps on a juicy pork belly; and soft roasted shallots enliven luscious steak. Service at this large, sparse bistro in the heart of chic Piper Street can wax and wane but Flouch’s light, zesty lemon tart shines on.
