The food love is starting to percolate in a pocket in Sydney's near-south.

Hot on the heels of Ren Ishii's arrival in Ramsgate, a $15 million redevelopment of the St George Sailing Club is about to gift nearby San Souci a prime waterfront restaurant.

Architect Jon Jacka has crafted the redeveloped sailing club and the 300-seat bistro will open in the first week of September, with chef Justin Wong overseeing its kitchen.

Wong, who started his career working for chefs Luke Mangan and Dietmar Sawyere before a long stint in Europe and Asia, offered an early look at the opening menu.

The raw bar will dish up fresh oysters, tuna tartare and salmon sashimi with black bean ponzu. A luxe seafood platter ($150), beef cheeks ($35) and cauliflower steak ($28) are also on the menu.

Wong promises about 40 wines, cocktails and more than 14 beers on tap. Not to mention the prime water views.

The bistro (dining room) will be open for all-day dining from noon.
