The Rozelle Tramsheds development is on track, high-profile chef Jared Ingersoll a confirmed starter, hitching his wagon to a mega butcher shop-restaurant start-up opening there later this year.
"Butcher & Farmer will open in November. I'm the concept developer and will oversee the kitchen," Ingersoll says.
Butcher & Farmer is owned by the fast growing Seagrass Boutique Hospitality Group, and picks up where Ingersoll's Bottle & Beast pop-up left off.
"We'll be roasting over open coal pits," Ingersoll says of its 150-seat restaurant.
The chef, who built his profile at Danks Street Depot, will also oversee a cooking school and community garden as part of the Butcher & Farmer project, which is located in the Tramsheds at Harold Park.
"I don't think there's anything like it, anywhere. It'll also have a small deli, and a butcher where we'll break down whole animals," Ingersoll says.
