Matt Moran's group to open Chophouse in Parramatta

The Parramatta site jettisoned by British celebrity chef Jamie Oliver will be reborn with more home-grown flavour.

The Chophouse meat mecca is headed west to take its place. Jamie's Italian shut its doors at Parramatta's Centenary Square in early June, the second casualty in the remodelling of the British chef's Australian portfolio.

Matt Moran and business partner Bruce Solomon of hospitality group Solotel, have swooped on the empty site, and will serve their first Parramatta Chophouse steak in October.

"When we bought Chophouse [in the Sydney CBD] we always had in mind doing more," says Solotel chief executive Justine Baker.

Solotel already own Parramatta's Albion Hotel, so the crew know the area. With the new stadium under construction and a posse of central Sydney operators headed in – including the team from Eau de Vie, who are building a sky-high bar – Parramatta is in the midst of a hospitality boom.

"We'd like to do more [Chophouses], possibly even interstate," Baker adds.
