Maybe Sammy team brings El Primo Sanchez to The Rose Hotel on Oxford St

Oxford Street's reputation as the comeback king of Sydney eat streets has ticked another box, with the crew behind the award-winning Maybe Sammy set to launch a Mexican bar and eatery on the eastern arterial.

Good Food can reveal The Maybe Group has joined with Public Hospitality on a collaboration that will see El Primo Sanchez open on the ground floor of The Rose Hotel in December.

It follows the revitalisation of a strip once lined with for lease signs. The new wave of hospo venues includes Merivale's The Paddington and Fred's, and Porcine.

El Primo Sanchez will open towards the Darlinghurst end of Oxford Street, where Paski Vineria Popolare joined the party late last year and a new hotel is under construction at the site where Don Peppino's formerly traded.

Maybe Group co-owner Vince Lombardo says El Primo Sanchez will offer "authentic, high levels of service" with a fun vibe. It'll include the sort of attention to detail that has seen CBD bar stallion Maybe Sammy become a fixture on The World's 50 Best Bars list.

Lombardo wants to serve cocktails in traditional handmade clay jugs. There will also be a strong selection of agave spirits. The food menu will skew "more traditional Mexican than contemporary", ranging from lighter snacks such as tacos to more substantial dishes.

The clever transformation of an Aussie pub into a tequila and mezcal destination isn't Public Hospitality's only play on the strip. Just this month it opened Oxford House hotel in the property next door to The Rose.

Former Chin Chin chef Tyler Preston is already delivering Hiramasa kingfish sashimi and grilled market fish with hazelnut puree, burnt butter and leek oil at Oxford House's restaurant.

You can also grab a plate of sauteed mushrooms with crispy kale, truffle oil and pecorino at the Tom de Plater-designed all-day restaurant. The Oxford House hotel eatery dishes up omelette with goats curd, as well as ricotta and spelt hotcakes.

If the club sandwich and a roasted cauliflower with miso glaze don't give you Palm Springs vibes, the hotel's pool and pool bar might.
