Sydney Tower Dining to unveil $12 million refurb with new bar and chef

With the luxe $12 million refit of Sydney Tower Dining set to be unveiled on September 24, there are a few other surprises in store at the spinning top.

In a move that will have seasoned Sydney diners licking their lips, former head chef at the hatted Bridge Room Mike Dierlinger has joined the project.

Dierlinger will oversee the kitchen at its signature restaurant, to be renamed Infinity at Sydney Tower (dropping its previous moniker, 360 Bar and Dining), as well as the new Bar 83 – which at 305 metres will clock in as Sydney's highest bar.

Dierlinger, who also worked at Tetsuya's and Nour (where Good Food hears chef Paul Farag is headed after departing Josh Niland's Fish Butchery), has big plans – with a new dish of drunken chicken with burnt citrus, yellow beetroots and brioche on Infinity's opening menu.

The Tower's famed buffet is also returning. Group executive chef George Diamond says the buffet will be branded SkyFeast, but will open with more of a canteen formula given the current COVID-19 challenges.
