But there's a long list of other regional specialities to explore, including chilli wontons slick with vermilion oil and showered with sesame seeds and chilli flakes; moreish, sticky pork spareribs; and deep-fried soft-shell prawns buried in a mound of chopped chillies and crunchy peanuts.
