Once they're picked, figs won't ripen any further. If all you can find are firm figs, then poaching or baking them in liquid will add flavour and soften them.

Ingredients

  • 12 figs, cut in half, top

  • to bottom

  • 375ml dessert wine

  • 4 whole peppercorns

  • 2 tbsp honey plus

  • extra 6-8 tsp for serving

  • 6 scoops vanilla gelato

  • or ice-cream

Method

  1. Preheat the oven to 180C. Place fig halves, cut side up, in an ovenproof dish. Pour in dessert wine and add peppercorns. Drizzle the 2 tbsp honey over figs and bake in oven for about 15 minutes until tender. Remove figs from their liquid and cool. Place liquid in a saucepan and boil on moderate flame until liquid has reduced by two-thirds. Chill in refrigerator. To serve, place three or four fig halves in a bowl accompanied by a scoop of vanilla gelato. Add some of the reduced syrup and drizzle with teaspoon of the remaining honey.
