Refreshing, cool and spicy. Eat as is or add some excitement to fish, chook or tortilla chips.

Ingredients

  • 2 cups mango, large dice

  • 2 cups peaches or nectarines, pitted and chopped

  • ¼ tsp sea salt

  • 1 clove garlic, minced

  • ¼ cup fresh basil or coriander, chopped

  • ½ small chilli, diced

  • 2 tbsp ginger juice (finely grated then squeezed)

  • ¼ cup fresh lime juice

Method

  1. In a large bowl, combine the mangoes, peaches, salt, basil or coriander, garlic, chilli, ginger and lime juice.

    Chill for two hours before serving.

    Makes 4 cups
