Start the timer. Dinner will be ready in 20 minutes – quicker than order-in pizza. And while it cooks, you could whip up a simple green salad to serve alongside.

Ingredients

  • 2 large store-bought wood-fired pizza bases

  • ¼ cup extra virgin olive oil

  • 2 tbsp zaatar, plus extra to sprinkle (see note)

  • 1 garlic clove, crushed

  • 1 tsp finely grated lemon zest

  • 1 green chilli, thinly sliced

  • 16 large peeled green tiger prawns, halved

  • ¼ cup oregano leaves, to serve

  • lemon wedges, to serve

Method

  1. Step 1

Preheat oven to 180C fan-forced (200C conventional). Place the pizza bases on two large baking trays. Mix 2 tablespoons of the olive oil and the zaatar together in a small bowl and brush over each pizza base.

  2. Step 2

Place the remaining oil, garlic, lemon zest, chilli and prawns in a bowl. Season with salt and pepper and toss gently to coat. Place the prawns on top of the pizza and drizzle with any remaining garlic oil.

  3. Step 3

Place in the oven and bake for 15 minutes, or until the base is golden and the prawns are just cooked.

  4. Step 4

Serve topped with oregano, lemon wedges and extra zaatar.

Note

Zaatar is a Middle Eastern herb-and-spice mix consisting mainly of dried thyme and oregano, toasted sesame seeds and salt.
