Lunchbox recipes: MYOesli seed bars

Raid the pantry for seeds and dried fruit and adapt these bars as you see fit.

Ingredients

  • 300g sunflower seeds

  • 125g pepitas

  • 40g currants/dried blueberries (optional)

  • 50g sesame seeds

  • 100g honey

  • pinch of salt flakes

Method

  1. Step 1

    Preheat oven to 160C. Line a small-ish tray with baking paper (including up the sides).

  2. Step 2

    Combine all of the ingredients in a bowl, stirring patiently until the mix comes together (it'll feel like it doesn't stick at all, and then BOOM!).

  3. Step 3

    Use a spatula to scoop the mixture onto your baking tray at a thickness of about 1cm.

  4. Step 4

    Bake for 30 mins, or until golden brown. Allow to cool completely before slicing through into bars with a sharp, heavy knife.
