This simple side dish for pastas requires almost no effort and the rich, browned cloves of garlic complement the mushrooms beautifully.

Ingredients

  • 12 cloves garlic

  • 12 large button mushrooms

  • 5 tbsp olive oil

Method

  1. 1. Heat your oven to 180C fan-forced (200C conventional). Place the garlic cloves in a baking dish or oven-proof frying pan just large enough to fit all the mushrooms, slightly overlapping (you don't want too much room between the mushrooms or they'll dry out).

    2. Place one mushroom on top of each clove of garlic to protect them from direct heat, then drizzle everything generously with the olive oil. Season well with salt.

    3. Roast for 75-90 minutes, stirring after 1 hour, until the mushrooms are a deep brown and slightly shrivelled. Serve straight from the pan.
