Wild hibiscus mojito popsicles

Ingredients

  • 180ml white rum

  • 3 tbsp fresh lime juice

  • 160ml hibiscus flower syrup*

  • 250ml soda water

  • 8 hibiscus flowers

  • mint leaves to garnish

  • * Hibiscus flowers in syrup are available from specialty food stores.

Method

  1. Mix rum, lime juice, syrup and soda water in a medium jug.

    Place mint leaves and hibiscus flowers into popsicle moulds.

    Top with mixture and freeze for 3-4 hours, until set.
