Glory Days brings California-style food to the revamped Bondi Pavilion

The refurbished Bondi Pavilion is awash with pre-Christmas venue launches and pop-ups, with Glory Days the first of the permanent big players to drop when it opened on Friday, December 23.

Glory Days owner Aaron Crinis (Glorietta, Glory Days Coffee) opens daily 6am-5pm, with a pruned menu on public holidays.

"We're saying every day is vacay," Crinis says about the Glory Days summer mantra. He's snared Watsons Bay Hotel head chef Damien Hyde, who will punch out a menu Crinis describes as a "nod to California-style fare".

Hyde, who also worked at The Boathouse Group, knows his way around relaxed coastal food, so buckle up for a summer of chilli scrambled eggs with whipped feta and cavalo nero, soba noodle salad and a poached chicken with peach and pecan.

"People will be able to walk in straight off the beach," he says of the venue, which sits at the end of the pavilion where Bucket List preciously traded.

Glory Days has also kicked off a summer residency on the pavilion's first floor. At weekends (noon-9pm) you can tuck into buckets of prawns and kingfish ceviche, washed down with a drink and balcony views over the beach.

The pavilion will have to wait a little longer for the launch of Promenade Bondi Beach, the mega restaurant at the pavilion, which now has an opening date of late summer.

But there's a teaser for the restaurant, with owners House Made Hospitality opening a pop-up in recent days on its outdoor terrace in collaboration with Aperol.

Casa Aperol will run through summer (daily 11.30am-10pm), with crisp king prawn buns and fresh oysters from the House Made team, live music on Sundays and plenty of Aperol Spritz.
