This recently renovated Sydney fave nestles quietly behind the flash and trash of Bondi's beachfront. Pompei's is rightly known and loved for its sensational gelato, but locals and visitors also make the pilgrimage for the salty, chewy tension in the delicious thin, crusty pizzas, fashioned from dough proven for more than 36 hours. Each pizza base is a stage on which simple and fresh toppings such as tomato and buffalo mozzarella shine. Even a simple garlic pizza is fragrant, spicy and sweet, and sides such as a shredded cabbage salad celebrate the fresh, earthy flavours of seasonal veg.
