Sorry, regulars - the word is out. The training restaurant at TAFE's Sydney Institute was Ultimo's best-kept secret. Book online and prepay for three-course lunches or four-course dinners prepared and served by supervised third-year hospitality students in a modern, elegant dining room with dazzling skyline views. For $27 a head (dinner), a salmon appetiser, roast pumpkin soup, pork belly, vanilla panna cotta, a surprise palate-cleansing pina colada shot and coffee is brilliant value. The menu changes according to the day's student chef, who visits each table after service to meet patrons and hear feedback. Truly minor errors aside, this is a champagne dining experience on a beer budget. Full marks.
