The Australian Open 2018 ups its already strong food game this summer with the introduction of the AO Chef Series, bringing together some of the world's best chefs in a tantalising series of pop up restaurants at The Glasshouse in Melbourne.

Cooking up a storm will be Peter Gilmore from Sydney's three-hatted Quay and Bennelong, Angela Hartnett from London's Murano, Alejandro Saravia from Melbourne's Pastuso and Jake Nicolson from Blackbird Bar & Grill in Brisbane.

Peter Gilmore will host his first ever Melbourne event, an intimate one-night-only five-course degustation menu on Wednesday 24 January.

"I'm looking forward to being a part of one of Australia's greatest sporting events and showcasing a selection of Quay's signature dishes down in Melbourne," he said.

Acclaimed UK Michelin-starred chef Angela Hartnett will feature her five-course degustation menu, based on her award-winning London restaurant Murano, and featuring seasonal Australian food with an Italian accent.

"I'm super excited to be coming to Melbourne," says Angela.

"We're bringing Murano to Melbourne. It's 10 years old next year so we're putting a menu together that really shows what Murano is about."

Alejandro Saravia will showcase Gippsland produce matched with the finest local wines.

"After planning this for a long time, and working with a lot of different regions in Gippsland and a huge variety of produce, we are finally ready to show this, in the amazing space which is The Glasshouse," says Alejandro.

Jake Nicolson, one-hatted executive chef from Brisbane's Blackbird Bar & Grill, is creating a four-course degustation heritage-style Australian menu and is excited to be coming back to Melbourne.

"I'm very excited about returning to my home turf of Melbourne, especially for an event as prestigious as the tennis," he said.

"Blackbird prides itself on amazing seasonal produce, simplicity on the plate and amazing flavour. Expect the best of the season's produce prepared simply to highlight every ingredient."
