A baby grand dominates the sleek but simple dining room and owner Joshua Kwak works the room brandishing a chopstick as if conducting classical music. His passion for music is clear and seems to extend to the food. The dolsot bibimbap, a meat, rice and egg dish, is served with a flourish, and assembled at the table by the maestro himself. The bibimbap is rustic and earthy and only gets better as you work through the bowl to the rice that's crisped up on the side of the hot stone pot. Sweet and sticky beef short ribs, served sizzling hot, hit all the right notes too.
