The Lindoni's experience encapsulates the lively charm of southern Italy - from smartly dressed, charmingly accented waiters to the cascading sandstone fountain and, of course, the food and wine. The menu retains traditional elements of owner Rio Capurso's native Puglia but has evolved to find a happy balance that is just as much about Queensland produce. Crisp-skinned pork belly is served with a creamy cannellini bean puree, tempered by the freshness of warm apple and fennel salad. Beneath four large, paper-thin ravioloni parcels lies a velvety heirloom tomato veloute; within there is a luxe filling of Vanella buffalo milk ricotta, mascarpone and stretched curd. A weekly specials list might include dishes with a stronger Puglian focus. While the classic tiramisu is a fitting close to a meal here, it is worth considering one of the more innovative specials, such as a rustic take on peach tarte tatin served with little discs of red wine jelly and tangy yoghurt gelato.
