The festive season in Australia is filled with an incredible energy that goes hand in hand with the endless sunshine we associate with our holidays. Seafood is a non-negotiable in summer, and whether chilled or grilled, it's all delicious. It's ideal as an entertaining option as it needs very little time to marinate, even less time to cook, and it looks so impressive. The quality of seafood we have access to here is something special and there's something for every budget, be it fresh from the market or from the supermarket freezer – look for sustainable producers such as Aquna, Crystal Bay and Humpty Doo.To really make beautiful produce shine, I look to the grilling traditions and flavours of South-East Asia. The smoke and char of barbecuing brings nuanced flavour to already flavourful dishes.These recipes use the marinating process to pack in the flavour, and 90 per cent of the work can be done long before your guests arrive.
