A delicious snack idea which can be prepared in advance, refrigerated and served when needed.
250g butter
2/3 cup castor sugar
1/3 cup honey
1/3 cup cream
1/3 cup brandy
300g flaked almonds
150g unsalted shelled pistachio nuts
100g dark or milk chocolate
Preheat the oven to 200C. Line the base and sides of a 19cm x 29cm lamington tin with baking paper and grease well.
In a large saucepan melt the butter, add the sugar, honey, cream and brandy. Stir and bring to the boil. Remove from heat and add the nuts. Mix well.
Spread the mixture into the prepared tin and bake for 25 minutes, or until the top is golden brown. (Place a dish in the bottom of the oven to catch any overflowing liquid during cooking.) Remove and cool.
Melt the chocolate in a bowl over gently simmering water. Drizzle over the slice. Refrigerate. Cut into squares or rectangles to serve and store in the fridge.
