Banana and chocolate are well paired in this easy to make muffin recipe.
2 cups self-raising flour
1 tsp baking powder
¾ cup raw or castor sugar
100g butter, melted
1 free-range egg, lightly beaten
¾ cup milk
3 ripe bananas, mashed
⅔ cup chocolate bits
1. Preheat the oven to 180C. Sift the flour and baking powder into a medium bowl. Add the sugar and mix well.
2. In a large bowl, whisk together the butter, egg and milk. Add the banana and mix well. Stir through the dry ingredients until just combined. Stir in the chocolate bits.
3. Grease 12 muffin moulds and spoon in the mixture to about three-quarters full.
4. Bake for 20 minutes or until golden brown and cooked through.
