This simple salad gets a flavour boost from a tahini-based dressing that works well with any vegetable: use a combination of your favourites or whatever you find in the market.

Ingredients

  • 1 bunch broccolini

  • 120g green beans, trimmed

  • 120g snow peas, trimmed

  • 1 tbsp peanut oil

  • 3 tbsp toasted black sesame seeds

  • handful coriander leaves

for the dressing

  • 50g tahini paste

  • 2 tbsp water

  • 1 small garlic clove, finely chopped

  • 1/2 tsp soy sauce

  • 1 tsp honey

  • ¾ tbsp apple cider vinegar

  • 1 1/2 tbsp mirin

  • pinch of salt

Method

  1. Trim the broccolini and cut lengthways to create stems that are similar in size and thickness to the beans. In a large pot of boiling salted water, add the green beans, then the broccolini 30 seconds later. After about a minute, add the snow peas for a final 30 seconds. The aim is to have all the vegetables al dente. Drain, and refresh in iced water. Drain well again.

    Mix the vegetables together in a bowl with the peanut oil and some of the sesame seeds and coriander leaves.

    Whisk all the dressing ingredients together. Add water, if needed, until the mixture is of pouring consistency and check seasoning.

    Serve the salad on a platter. Pour the sesame dressing over it and garnish with remaining coriander and sesame seeds.
