This bacon and brussels sprouts side is almost a meal in itself. You can use broccoli or broccolini instead of brussels sprouts. Serve with our lemon butter barramundi recipe or any wintry meal.
2 tbsp olive oil
4 garlic cloves, finely sliced
1 brown onion, diced
3 bacon rashers, cut into thin strips
300g brussels sprouts, quartered
½ bunch mint, leaves picked and torn
1. Put a large, heavy frying pan on a high heat, add the olive oil, garlic, onion and bacon. Cook for 5 minutes until the onion is translucent, then add the brussels sprouts and cook until soft.
2. Add the peas and ripped mint, season well and serve.
