
A recipe from the Good Food collection. (Note: This recipe is best prepared in advance, to allow the chicken to marinate for several hours or overnight.)
Ingredients
750g chicken thigh fillets
1/4 onion, chopped
2 cloves garlic, crushed
1 tablespoon grated fresh ginger
2 tablespoons lemon juice
3 teaspoons ground coriander
3 teaspoons ground cumin
3 teaspoons garam masala
1/3 cup (90g) natural yoghurt
Method
1. Cut the chicken into 3cm cubes. Soak 30 wooden skewers in cold water for several hours.
2. Finely chop the onion, garlic, ginger, juice and spices together in a food processor. Transfer to a bowl and stir in the yoghurt and 1/2 teaspoon salt.
3. Thread 4 pieces of chicken onto each skewer and place in a large baking dish. Coat the chicken with the spice mixture. Cover and refrigerate for several hours, or overnight.
4. Barbecue, fry or grill the chicken skewers, turning frequently, until cooked through.
