This simple, chopped side salad works with all kinds of meals, but it's brilliant with a barbecue.
1 cucumber, peeled at intervals and diced
½ red onion, thinly sliced
2 tomatoes, diced
½ red capsicum, diced
1 tbsp lemon juice
2 tbsp olive oil
1 tbsp finely shredded parsley
¼ tsp sumac (optional)
1. Combine the cucumber, onion, tomato and capsicum in a bowl and toss with the lemon juice, olive oil, parsley and sumac (if using). Season with salt just before serving.
