This simple, chopped side salad works with all kinds of meals, but it's brilliant with a barbecue.

Ingredients

  • 1 cucumber, peeled at intervals and diced

  • ½ red onion, thinly sliced

  • 2 tomatoes, diced

  • ½ red capsicum, diced

  • 1 tbsp lemon juice

  • 2 tbsp olive oil

  • 1 tbsp finely shredded parsley

  • ¼ tsp sumac (optional)

Method

  1. 1. Combine the cucumber, onion, tomato and capsicum in a bowl and toss with the lemon juice, olive oil, parsley and sumac (if using). Season with salt just before serving.

    Serve with: Adam Liaw's kebab-style lamb chops
