Ingredients

  • 2 cups plain flour

  • 1/2 cup cocoa powder

  • 1/4 tsp baking powder

  • 1 1/2 tsp nutmeg

  • Pinch salt

  • 140g butter, softened

  • 1 1/4 cups brown sugar, tightly packed

  • 1 egg white, lightly beaten

  • 200g dark chocolate

Method

    1. Combine the flour, cocoa powder, baking powder, nutmeg and salt in a medium bowl.
    2. In a separate large bowl, beat the butter until pale and add the sugar, beating until creamy. Add the egg white, then gradually add the dry ingredients, mixing until well combined. You should have a dryish dough (add a little water if it won't come together).
    3. Place the dough between two sheets of baking paper and roll out to a depth of about 5mm. Place in the freezer for 10 minutes (or in the fridge for an hour).
    4. Preheat the oven to 180C. Use a biscuit cutter to cut out rounds or shapes - it doesn't matter what size or shape. Place on a greased baking tray and bake for 12-15 minutes. Cool on a wire rack.
    5. Melt the chocolate in a microwave or in a heatproof bowl over a saucepan of gently simmering water. Spread over one side of the biscuits.
