The easiest guacamole is just avocado, a pinch of salt and citrus juice. Once you have that straight, you can add other ingredients. It's a moveable feast! Here's one suggestion.

Ingredients

  • 1 avocado

  • ¼ tsp salt

  • 1 tbsp lime or lemon juice

  • 2 tbsp finely shredded coriander

  • 1 tbsp finely chopped red onion

  • freshly ground black pepper, to serve

Method

  1. 1. Cut the avocado in half, remove the seed and scoop the flesh into a bowl. Add the salt and citrus juice and mash together with a fork until combined to a chunky salsa. Stir through the coriander and red onion, and top with a little black pepper to finish.

Adam's tip: If you want even more character in your guacamole, add a few chopped cherry tomatoes, some green chillies or jalapenos, spring onions, sour cream or anything else you like.

Serve with: Adam Liaw's cauliflower nachos
