Dollop on bread-and-butter pudding or banana cake.
500g mascarpone
1 vanilla bean, cut in half lengthways, seeds scraped
pinch cinnamon
pinch ginger powder
100ml espresso coffee
Mix mascarpone, vanilla seeds, cinnamon and ginger.
Make a well in the middle of the mascarpone and carefully fill with espresso.
