Ingredients

1½ teaspoons active dry yeast

½ teaspoon sugar

150 g (5½ oz/1 cup) wholemeal (whole-wheat) flour

185 g (6 ½ oz/1¼ cups) plain (all-purpose) flour

1 teaspoon salt

Ham and pineapple topping

1½ tablespoons tomato paste (concentrated purée)

125 g (4½ oz/1 cup) shredded sliced ham

200 g (7 oz/1¼ cups) chopped fresh pineapple

200 g (7 oz/1⅓ cups) grated mozzarella cheese

Tomato, cheese and chicken topping

1½ tablespoons tomato paste (concentrated purée)

1 large tomato, finely sliced

200 g (6 oz/1¼ cups) chopped cooked chicken

175 g (6 oz/1¼ cups) grated cheddar cheese

Pesto and prosciutto topping

150 g (5½ oz/¾ cup) pesto

200 g (7 oz) mozzarella cheese, finely sliced

90 g (3¼ oz/1 cup) finely sliced mushrooms

150 g (5½ oz/8 slices) prosciutto, torn

1 small handful of basil, torn

Method

1. Put the yeast and sugar in a small bowl with 250 ml (9 fl oz/1 cup) warm water. Leave in a warm place for 10 minutes, or until foamy. Transfer to a large bowl, add the flours and salt and mix until a rough dough forms. Turn out onto a lightly floured surface and knead for 5 minutes, or until smooth and elastic. Place in an oiled bowl, then cover with plastic wrap and leave in a warm place for 1 hour, or until doubled in size.

2. Preheat the oven to 200°C (400°F/Gas 6). Knock the dough down, then turn out onto a lightly floured surface. Divide into three portions and roll each out to an 18–20 cm (7–8 inch) round. Place on three pizza trays and arrange the toppings over each one. Bake for 20 minutes, or until the dough is crisp and golden and the toppings are bubbling. Cut into wedges and serve.

3. For the ham and pineapple topping, spread the tomato paste over the pizza bases using the back of a spoon. Sprinkle evenly with the ham and pineapple, then scatter the cheese over the top.

4. For the tomato, cheese and chicken topping, spread the tomato paste over the pizza bases using the back of a spoon. Arrange the tomato and chicken over the top and sprinkle with the cheese.

5. For the pesto and prosciutto topping (not shown), spread the pesto over the pizza bases using the back of a spoon. Top with the cheese, mushrooms and prosciutto. After baking, scatter with the basil.
