⅔ cup sliced pitted olives
⅔ cup sliced sun-dried tomatoes
handful of parsley, finely chopped
fresh rocket and parsley leaves to serve (optional)
1. Preheat the oven to 175°C.
2. Whisk the eggs until well combined. Mix through the remaining ingredients. Pour the mixture into a pie dish, measuring about 18.5 centimetres. Depending on what you are using, you may want to grease it first.
3. Bake for 20-25 minutes. Allow to cool before serving.
