These Basque tapas are named for a passionate beauty played by Rita Hayworth. The slender green pickled chillies in the recipe are not especially hot. They are available in Spanish and Portuguese foodstores.

Ingredients

40 small pitted green olives

20 best-quality canned anchovy fillets in olive oil

20 small pickled green chillies

Method

On a cocktail skewer place an olive, then a folded anchovy fillet, a chilli and another olive.
