Try making this lemonade or, alternatively, peel long strands of the aromatic rind and stir into cakes, puddings or porridge.
1/4 cup fresh ginger juice
6 cups water
1/2 cup lemon juice
1/2 cup maple syrup
Scrub a large knob of ginger and grate into a ball of pulp.
Squeeze pulp with your hand to extract the juice.
Boil the water in a pan, then add the ginger and lemon juice.
Turn the heat off and leave to steep for 20 minutes before adding the maple syrup. Refrigerate and serve when cool.
