Hot cross marmalade bread and butter pudding

What's Easter without hot cross buns? Well you're about to take it up a notch with this family-friendly Easter recipe. The whole family will come running when they smell the aromas of marmalade and cinnamon baking away in your NEFF oven.


6 hot cross buns, halved

90g butter, softened

½ cup orange marmalade

400ml cream

400ml milk

5 eggs

⅔ cup brown sugar

1 tbsp vanilla 

120g dark or milk chocolate melts 

cream or ice-cream, to serve


1. Preheat the oven to CircoTherm 145C (in a NEFF oven, and also 145C in a regular oven). 

2. Spread the cut side of the buns liberally with butter, then spread thickly with marmalade. Place the buns, cross side up and bases marmalade side up decoratively into a deep 32cm x 26cm baking dish (about 3 litre capacity).

3. In a bowl whisk together the cream, milk, eggs, brown sugar and vanilla then pour over the bread. Dot the chocolate chunks among the hot cross buns, allow to stand for 15 minutes.

4. Bake for 50-60 minutes or until the custard has just set. Serve warm with extra cream or ice-cream.
