The brains at Smudge Books have followed up the popular Flavours of Melbourne with a new release, Flavours of Urban Melbourne, with recipes from some of the city's favourite foodie haunts.

In this extract, chef Daniel Wilson from Huxtaburger in Smith Street, Collingwood, shares his recipe for the eponymous burger.

1kg wagyu beef mince
15g salt
4g pepper
1 iceberg lettuce torn & washed
4 tomatoes sliced
10 slices cheddar cheese
1/2 cup mayonnaise
Tomato ketchup
10 x 45g buns (Breadtop)
Clarified butter

Mix salt and pepper through mince and weigh out to 50g patties and flatten and lay out on greaseproof paper.

Cook patties on a flat grill and put the cheese on top when you turn it over.

Brush buns with clarified butter and toast on the flat grill.
