Macerating berries brings a nice acidity to the natural sweetness of the fruit.
1 punnet blueberries
1 punnet raspberries
1tbsp castor sugar
1 lemon, juiced
1 vanilla bean, seeds scraped
zest of half an orange
¼ bunch mint, roughly torn
1. Add the blueberries, raspberries, castor sugar, lemon and vanilla bean to a small bowl.
2. Let sit for half an hour. Just before serving, lightly fold the orange zest and mint into the mix.
3. Serve a generous spoonful alongside this strawberry and white chocolate almond cake.
