Stir-fried iceberg lettuce

I love stir-fried lettuce, it's great just with oyster sauce or XO

Ingredients

  • 2 tbsp vegetable oil

  • 5 cloves garlic, smashed

  • 1 small iceberg lettuce, cut into quarters, washed and dried

  • 1 tbsp shaoxing

  • 1 tbsp light soy sauce

  • ¾ tsp sugar

  • pinch of sea salt

  • 1 tsp sesame oil

Method

  1. 1. Heat a wok until just smoking. Add the oil and, when hot, add the garlic and stir-fry until fragrant (10-20 seconds). Add the lettuce and stir-fry for 1-2 minutes, or until it becomes limp. Deglaze the wok with the shaoxing, then add the soy sauce, sugar and salt and cook until the lettuce is tender. Remove from the heat and toss with sesame oil to serve.
